Non bisognerebbe conservare determinate sostanze, come gli integratori alimentari e le vitamine, in ambienti umidi e caldi come la cucina o il bagno. Secondo un recente studio, pubblicato su Journal of Agricultural and Food Chemistry molte sostanze cristalline che contengonovitamina C ed alcuni tipi di vitamina B sono inclini, in particolari condizioni di umidità, ad iniziare un processo, denominato deliquescenza, che potrebbe comprometterne irreversibilmente le proprietà e quindi l’efficacia.
Lo studio, condotto da una ricercatrice statunitense, Lisa Mauer, professore associato di scienza alimentare, si è basato sullo studio di diverse sostanze cristalline, utilizzando una bilancia gravimetrica per determinare a quale tasso di umidità le sostanze prese in considerazione cominciano il processo di deliquescenza.

I campioni testati aumentavano di peso al punto di deliquescenza, quando cominciavano ad assorbire l’umidità presente nell’ambiente.

Lo stesso processo è evidente anche su altre sostanze comunemente presenti in casa, come per esempio il sale e lo zucchero, che mostrano evidentemente questo fenomeno. Il problema però per queste non sussiste, perchè in ogni caso per il loro impiego le trasformazioni chimiche non sono così importanti da renderle inutilizzabili.

E’ chiaro invece che, quando si tratta di sostanze come gli integratori alimentari o le vitamine, il fenomeno è invece sensibilmente più serio perchè può provocare la perdita parziale o totale dell’efficacia di questi.

Dipende dalla formulazioni, sostiene la dottoressa Mauer, ma in alcuni casi, come per esempio la vitamina C, si possono perdere completamente i principi attivi anche in meno di una settimana.

Bagni e cucine secondo la ricercatrice, sono i luoghi in cui questo fenomeno accade con più facilità, a causa dell’alta concentrazione di umidità presente nell’ambiente.

Il semplice aprire e chiudere la confezione, nel corso del tempo, è già sufficiente in alcuni casi per comprometterne l’integrità.

Le sostanze cristalline sono interessate a questo fenomeno a gradi di umidità diversa, ha ricordato la scienziata statunitense, per esempio, nel caso della vitamina C, l’acido ascorbico comincia il processo con il 98% di umidità, mentre per l’ascorbato di sodio è sufficiente l’86% di umidità.

Ad un certo grado di umidità alcune sostanze possono sciogliersi del tutto, e, anche se riposte in un ambiente asciutto, queste possono aver perso definitivamente tutte le proprietà chimiche: i cambiamenti chimici risultano essere irreversibili.
Il che non significa, conclude la ricercatrice che le sostanze diventino pericolose, ma solo che la loro efficacia diventa nulla.
