Dopo aver parlato delle proprietà del miglio, farro segale, orzo, avena e grano saraceno, oggi vogliamo parlare di un altro cereale, sconosciuto a molte persone, il kamut.
Il kamut è un cereale molto antico, che risale addirittura a cinquemila anni fa, tanto da essere coltivato dalla popolazione egiziana.
Il kamut fa parte della famiglia delle Graminacee il suo nome significa anima della terra.



Il kamut è il cereale con l’apporto nutrizionale più completo poichè contiene molte sostante nutritive essenziali per la salute dell’organismo.
Il kamut contiene il 9 per cento di acqua, il 17 per cento di proteine, il 68 per cento di carboidrati ed il 2 per cento di fibre alimentari grezze.
Il calcio, il ferro, il magnesio, il fosforo, il potassio, il rame, lo zinco, il sodio ed il selenio sono i minerali presenti al suo interno, mentre come vitamine ci sono le vitamine del gruppo B (tiamina, riboflavina, vitamina B6) e vitamina E.
Il kamut è diventato un cereale molto consumato dalle persone che hanno allergie al grano, ma non può essere consumato dalle persone che soffrono di celiachia, in quanto al suo interno è contenuto il glutine.
E’presente al suo interno il selenio che ha ottime proprietà antiossidanti e protegge l’organismo dai radicali liberi, che sono la causa principale dell’invecchiamento delle cellule e della comparsa dei tumori.
