Come conservare e lavare frutta e verdura correttamente per evitare intossicazioni alimentari? Diciamoci la verità: c’è una grande attenzione alla conservazione e alla cottura di carne e pesce, mentre per mele o l’insalata, a volte una sciacquata con l’acqua sembra bastare. E’ un errore che può condurre ad intossicazione alimentare. Ecco allora alcuni consigli pratici da non trascurare.

Si dice che mangiare qualcosa un pochino sporco possa “aiutare a fare anticorpi”. Questo è in gran parte vero, ma non bisogna dimenticare che nella terra esistono batteri altamente nocivi per l’organismo umano e che se il produttore non ha trattato adeguatamente ciò che mette in vendita il rischio di contagio è alto (come la cronaca ogni tanto ci insegna): pensiamo alle recenti epidemie di Escherichia coli ad esempio! I batteri possono arrivare su frutta e verdura in diversi modi: sicuramente nel modo classico, nei campi di coltivazione liberi attraverso il contatto con le feci degli animali (ma ormai è raro e non riguarda la grande distribuzione), ma anche attraverso i sistemi di irrigazione, fertilizzanti organici o escrementi di uccelli che passano sul campo.

Come lavare frutta e verdura

Il lavaggio contribuisce ad eliminare i batteri presenti sulla superficie di questi alimenti. Le verdure vanno lavate bene sotto l’acqua corrente e strofinate laddove possibile o lasciate un po in ammollo nell’acqua. Particolarmente importante sarà questo passaggio per togliere la terra visibile e tuitto ciò che è invisibile. Lo stesso dicasi per la frutta che si presterà anche ad essere strofinata bene e a volte può contenere tracce di antiparassitari. Un altro modo di eliminare i batteri è la cottura, ma sempre dopo aver lavato bene il tutto.

Conservazione e consumo

E’ buona norma lavarsi sempre le mani prima e dopo aver toccato alimenti crudi, comprese le verdure; i cibi crudi vanno tenuti separati da quelli pronti per essere mangiati; vanno utilizzati utensili diversi per gli stessi o comunque vanno lavati bene con sapone nel passaggio dall’uno all’altro.
Controllare l’etichetta – a meno che nell’imballaggio dell’insalata o degli spinaci non ci sia specificato che sono pronti da mangiare e già lavati, è necessario farlo, prima di consumarli. Tutto ciò contribuisce a ridurre il rischio di contaminazione degli alimenti, diretta o incrociata (attraverso cioè altri mezzi come ad esempio un coltello o un tagliere).

Donne incinte (per il rischio di toxoplasmosi), gli anziani, i bambini o chiunque abbia un sistema immunitario indebolito, dovrebbe seguire attentamente queste accortezze. Assolutamente per tutti ed in particolare proprio per queste categorie, evitare di assumere frutta e verdura, ricche di vitamine e sali minerali preziosi, per paura di un’intossicazione alimentare sarebbe un grande errore. Basta usare le semplici regole d’igiene che abbiamo appena elencato.
