Effetti collaterali dei miglioratori della panificazione

Molto spesso, nel pane che quotidianamente consumiamo, sono presenti delle sostanze, definite generalmente con il nome di miglioratori, e tra i quali rientrano soprattutto enzimi ed additivi, che hanno lo specifico compito di far legare, in maniera più efficiente del normale, le farine ed i lieviti, così che il pane diventi più morbido e soffice nel minor tempo possibile.

Una recente inchiesta condotta da Max Laudadio di Striscia la Notizia, di cui vi abbiamo riportato qualche notizia nel nostro articolo “Miglioratori della panificazione“, avrebbe messo in luce il fatto non solo che la maggior parte delle panetterie italiane eviti di indicare, in etichetta, la presenza dei suddetti miglioratori, ma anche che, sebbene direttive comunitarie ne autorizzino l’utilizzo ed il consumo, potrebbero avere seri effetti collaterali causati, in particolar modo, dal fatto che il pane così prodotto abbia un indice glicemico molto alto.

Ciò, dovesse venir confermato, potrebbe voler significare che, quanti consumato abitualmente pane addizionato di miglioratori della panificazione, potrebbero andare incontro a:

– diabete mellito di secondo tipo

– cardiopatie

– ipertensione

– steatosi epatica

– arteriosclerosi

– allergie

– asma

In conclusione si ribadisce, però, che per quanti studi sull’argomento siano stati fatti, non esiste ancora una documentazione scientifica tale da fare pensare che esistano veri e comprovati motivi di preoccupazione.

Questi miglioratori, infatti, sono usati, nella maggior parte dei casi, in percentuali inferiori al 3% della massa totale degli ingredienti utilizzati. Ciò fa si che, in definitiva, l’utilizzo dei suddetti sia inferiore alla soglia d’attenzione stabilita dalle normative europee in materia e che, dunque, tali miglioratori siano stati, a loro tempo e individualmente, identificati come sicuri e non nocivi.

La questione, dunque, più che i miglioratori in sé, utilizzati essenzialmente per far si che il prodotto finale risulti identico da panificio a panificio (ovverosia usati soltanto per creare uno standard minimo così da averne un riscontro commerciale), riguarderebbe le farine utilizzate dalle suddette panetterie.

Il noto inviato televisivo, con la propria inchiesta, lascerebbe intendere come la quasi totalità dei panifici, industriali o meno che siano, utilizzino farine decisamente scadenti, provenienti dai Paesi in via di sviluppo, dunque sicuramente meno costose ma prodotte in territori nei quali non si applicano le normative comunitarie in materia di coltivazione sicura.

Le succitate farine, dunque, venendo meno gli standard di qualità e sicurezza imposte dall’Unione Europea, conterrebbero grosse dosi di pesticidi vietati nel nostro Paese, oltre a numerose altre sostanze dannose.
