Verdure bianche importanti per una dieta equilibrata

patateSembra che i ricercatori non si stanchino mai di elencare le mille virtù delle verdure colorate ricchissime di sostanze nutrienti e benefiche, dalle verdure arancioni ricche di betacarotene alle verdure a foglia verde ricche di sostanze anticancro.

Adesso però arriva la “riabilitazione” anche delle verdure bianche, altrettanto indispensabili per una dieta sana ed equilibrata perché sono ricche di fibre, potassio e magnesio. 

 

Connie Weaver, professoressa di scienza della nutrizione presso la Purdue University nel supplemento “White Vegetables: A Forgotten Source of Nutrients” pubblicato sulla rivista Advances in Nutrition e realizzato a cura della American Society for Nutrition sottolinea che in realtà le persone non consumano il quantitativo quotidiano raccomandato di verdure. 

La varietà a tavola in questo caso può aiutare: sapere di poter consumare non solo verdure verde scuro e arancio, ma anche quelle più pallide, può essere importante per favorire il corretto consumo di verdure a tavola.

 

Prove alla mano, i ricercatori hanno dimostrato che l’inserimento regolare di verdure bianche nella dieta favorisce l’apporto di sostanze nutritive che appaiono molto spesso carenti, soprattutto fibre, potassio e magnesio. Largo ovviamente alle patate, molto apprezzate da ragazzi e da bambini e che possono essere considerate un’ottima alternativa a tavola, ricche di vitamina C, potassio e carboidrati complessi. Spazio anche ad altre verdure e ortaggi come ad esempio il cavolfiore, le cipolle, i funghi, le rape o il cavolo rapa.

I cavolfiori, ricchi di minerali e vitamine (soprattutto vitamina C), sono antiossidanti e hanno proprietà anticancro.

Le cipolle poi sono ricchissime di oligoelementi (ferro, potassio, magnesio fosforo); vitamine, flavonoidi. I funghi, ottimi per il sistema immunitario, rappresentano una valida fonte di minerali, vitamine del gruppo B e sostanze antiossidanti. Anche le rape, spesso snobbate a tavola, simbolo di una cucina povera, sono ricche di fibre, di acqua e hanno pochissime calorie. Insomma la varietà sembra essere l’arma migliore per la salute anche a tavola.
