Con Vitamina A si intende il Retinolo e tutti i suoi derivati come i retinoidi di cui si conoscono 1.500 tipi diversi; la vitamina A si può presentare sotto tre diverse forme: alcolica (retinolo), aldeidica (retinaldeide) ed acida (acido retinoico).
